A mix between an age-old idea for the modern-day diner and restaurateur, Stonegrill concept dates back to ancient cooking methods of the Egyptians and Vikings. The development of that concept to Stronegrill system has created a unique interactive dining experience to diners.
When utilizing this concept, service is always fast, meals are always fresh, healthy, nutritious and simple to prepare. With Stonegrill system, clients are able to determine the degree of doneness of the meat specially when brought out instantly at the dining table and start the grilling experience for each piece just the way they like it. A system that ensures flexibility for the chef to prepare à la carte meals, appetizers and desserts.
Meals are served on natural volcanic stones super-heated up to 400°C in a specially designed oven. Specifically selected for their high heat retention ability, these stones can maintain a prime cooking temperature for nearly 30-40 minutes and retain food natural juices, nutrients and enhancing its full flavour and tenderness. Stones are non-toxic, non-porous, and pass the FDA safety requirements. Cleaning of these stones is easy and usually completed in seconds using warm water, and a stainless steel scourer without detergent, followed by rinsing.
Here are a few tips on how to cook your steak to the right tenderness of your choice:
Rare:
Cook the steak for few minutes until it feels very soft with the back of the fork. Turn each side only once, depending on the thickness. This will warm the meat while keeping the centre cool. It will have a bloody red colour around the centre and pinkie towards the edges. Texture is soft and juicy.
Medium Rare:
Cook until steak surface become moist and feels soft with the back of fork. Turn each side only once till colour turns to warm red around the centre with no blood. Texture is tender and juicy.
Medium:
Cook the steak on one side until moisture is pooling on top surface and fork feels springy at the back then turn to the other side and repeat. Turn each side only once until colour turns to pink around the centre and gray-brown on the outside. Texture is firm and tender.
Medium Well:
Cook on one side until moisture is pooling on top surface. Turn and repeat on the other side. Continue to cook until close to losing all its juices and feels firm. Colour looks gravy-brown around the centre with a touch of pink.
Well Done:
Cook on one side until moisture is pooling on top surface. Turn and repeat on the other side. Continue to cook until almost dry, and feels very firm. Colour looks gray brown throughout and meat is hard to chew.
